Ingredients
4Granny Smith apples
1/2cupbutter
1/4cupbrown sugar
1TBSP.cinnamon
1 1/2tsp.vanillafor pancake batter
Pancake batter of choiceI use New Hope Mills Buttermilk pancake mix
Instructions
Peel your apples and slice them very thin. Then chop the slices again into little 1/4 inch pieces or use a chopper like this one and chop them using the smallest attachment.
Add the chopped apples, butter, brown sugar, and cinnamon to a saucepan and cook until they are tender, stirring frequently.
Make your pancake batter and add in 1 1/2 teaspoons of vanilla. I made one and a half batches of pancake batter which was 3 cups of dry mix.
Preheat a frying pan or griddle over medium heat, then spray with non-stick cooking spray.
Pour a large scoop of apples (a 1/4 cup or a little less), onto the hot griddle and spread out, then pour the batter by 1/3 cupfuls on top of the apples.
Cook the bottom side of the pancake and then flip the pancake gently and cook the other side for an additional 1-2 minutes or until the bottom is golden brown.
Continue process until the batter is gone.
Then top your pancakes with butter and maple syrup and enjoy!
