Ingredients

  • 1 cup Almond flour
  • 1/4 cup + 2 TBSP Coconut flour
  • 1 TBSP Xanthan gum
  • 1/2 tsp Baking soda
  • 1/4 tsp Baking powder
  • 1/4 tsp Salt
  • 6 TBSP Butter
  • 2 oz Cream cheese
  • 3/4 cup Monk fruit
  • 1 tsp vanilla
  • 2 eggs
  • 1 cup Lilly's dark chocolate chips
  • 3/4 cup Unsweetened shredded coconut

Instructions

  • Cream together butter, cream cheese, sugar and vanilla. Then stir in eggs.
  • In a separate mixing bowl combine flours, xanthan gum, baking soda, baking powder and salt. Then pour into butter mixture.
  • Mix together butter mixture and dry ingredients just until combined and then mix in coconut and chocolate chips.
  • Pre-heat oven to 350 degrees. Spoon tablespoon sized scoops of cookie dough out onto a baking sheet lined with parchment paper.
  • Slightly smash down cookie dough balls with the palm of your hand. Then bake for 7-8 minutes.
