Instructions
Cream together butter, cream cheese, sugar and vanilla. Then stir in eggs.
In a separate mixing bowl combine flours, xanthan gum, baking soda, baking powder and salt. Then pour into butter mixture.
Mix together butter mixture and dry ingredients just until combined and then mix in coconut and chocolate chips.
Pre-heat oven to 350 degrees. Spoon tablespoon sized scoops of cookie dough out onto a baking sheet lined with parchment paper.
Slightly smash down cookie dough balls with the palm of your hand. Then bake for 7-8 minutes.
