My family and I absolutely love this cucumber salad! It has thinly sliced cucumbers, onions, and carrots marinated in seasoned rice vinegar with a tiny bit of sugar for the perfect added sweetness. 

I always love to grow cucumbers in my vegetable garden and once they start getting ripe it’s cucumbers galore!

Other than making pickles in large batches, I run out of ways to use them all before they go bad. 

But this recipe is the best way to use them up and it’s so delicious! 

Plus it stays good in the fridge for weeks!

This year I have cucumbers, carrots, and onions growing in my garden so I was able to make the entire recipe with my own fresh vegetables which is awesome.

How to Make Cucumber Vinegar Salad

This recipe is so easy to make and it’s the most perfect healthy side or snack for any occasion! 

Ingredients:

1 red onion

8 medium carrots (peeled)

4 cups (thinly sliced cucumbers) which is about 2-3 medium cucumbers. I love to use Armenian Cucumbers but the next best option is English cucumbers.

4 cups seasoned rice vinegar

3 tablespoons sugar

Steps:

  1. Use a vegetable slicer and thinly slice your cucumbers and onions, then add them to a medium size mixing bowl.
  2. Peel your carrots and thinly slice them, then add to the bowl of cucumbers and onion as well.
  3. Add in 4 cups of seasoned rice vinegar and 3 tablespoons of sugar, then mix together.
  4. After mixing either cover the bowl with foil or poor it into a food storage container and place it in the fridge.
  5. It’s ready to eat immediately but the longer it can marinate the better. I like it best the following day!
