These creamy apple bars with oatmeal crumble have quickly became one of my new favorite desserts! Apple desserts are always one of my top picks and so when I’m looking for something new to bake I usually start with something that has fresh apples and go from there.
This recipe was inspired by a similar recipe with a lemon filling and I recreated it with an apple cinnamon filling and it turned out so good! It’ll definitely be a recipe that I continue baking year-round whether it be for the holidays or just a sweet treat for my family.

How to Make Apple Bars with Oatmeal Crumble
This recipe is different from other apple crumble bars I’ve had. It has a unique (but insanely delicious) filling with sweetened condensed milk which I think is truly the secret ingredient!
Ingredients:
Crust & Topping
- 1 1/4 cup Flour
- 1 1/4 cup Oats
- 1/2 tsp. Salt
- 1/2 tsp. Baking Soda
- 1/2 cup Sugar
- 1/2 cup Brown Sugar
- 3/4 cup Butter, melted

Filling
- 2 cups Granny Smith Apples, peeled and diced (approximately 3 large apples)
- 1 tsp. Cinnamon
- 3 Tbsp. Butter
- 14 oz. Sweetened Condensed Milk
- 2 large Egg Yolks
- 1/2 tsp. Vanilla
Directions:
Preheat the oven 350° F and then make the crust. Mix all of your dry ingredients in a medium mixing bowl and then stir in the melted butter. Stir until the mixture is well combined.

Then press half of the mixture into a greased 8×8 baking and bake for 15 minutes. After it’s done baking set it aside but leave the oven on.
While the crust is baking, prepare the apples. Peel the apples and then chop them into tiny 1/4 inch pieces or make it even easier and use a chopper such as the Fullstar Chopper which is one of my favorites!

Then put the diced apples into a saucepan with 3 tablespoons of butter and 1 teaspoon of cinnamon and simmer over medium-low heat for about 5-8 minutes until the apples start to get tender.
Next, mix 2 large egg yolks, sweetened condensed milk, and vanilla until the mixture is smooth. Then fold in the apple mixture and mix until combined.
Poor the filling onto the baked crust and sprinkle on the remaining topping. Then bake for an additional 25-30 minutes until the the topping is golden brown.

Let the pan cool at room temperature and then put the bars in the fridge for a few hours to cool before serving. Or if you need to speed up the cooling process, put the bars in the freezer for 1-2 hours.
I think these apple bars definitely taste best chilled but you could also serve them warm with a scoop of vanilla ice cream and I think that would be delicious as well!
